Both are horse names, not pony names.

I wish there was a way to revert the names to default... I changed some of the names without noting their original names.

Jester Horse: Joker. (Jangles is so much better though! I changed mine from Joker to Tintinnabula...hehe!)

Just an FYI -- the 2 PvMP rank steeds (Mahogany Bay, Free People's Courser) become available only at ranks 9 and 12, respectively. There are currently a couple of us working on that. But getting those ranks is a really long process... might take me at least 6 or 7 months from now for rank 9. So I'd suggest looking up those names elsewhere if possible, to save time.

I can confirm that the Free Peoples' Pony is named Unbroken Spirit.

I only have the Yule mounts in pony form, but I've just rechecked them and I know I haven't changed their names. Now I wish I'd thought to get them on a man or elf as well, since there seems to be some confusion around these couple.

I also know someone from lotro-wiki who updated many of the mount names today. I didn't verify these myself, but he said they were all taken from his in-game mounts. So take that for what it's worth.

Dusky Nimblefoot Goat (big): confirmed Clover
Nimble Redhorn-goat (big): confirmed Clover
Eriador Horse: Swiftwind
Steed of the Champion: he said the horse is named Fervour Builder, but this doesn't match what you already have there
Springtime Horse: confirmed March

He also got the PvMP mounts on Bullroarer. I'd understand if you don't want to use information from the beta build, but here are the names, in case you want to include them with question marks, since they're so difficult to earn:
